
1 kg beef chuck, cubed
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
3 carrots, sliced
3 potatoes, cubed
2 cups beef stock
1 cup chopped tomatoes
1 tbsp tomato paste
1 tsp paprika
1 tsp dried thyme
Salt and black pepper to taste
Heat olive oil in a large pot over medium heat.
Brown the beef cubes on all sides, then remove.
Sauté onion until soft, then add garlic.
Stir in tomato paste, paprika, and thyme.
Return beef to the pot and add stock and tomatoes.
Bring to a gentle simmer, cover, and cook for 1 hour.
Add carrots and potatoes and simmer for 30 minutes.
Season to taste and serve warm.
